Spiced Arancello

 

Ingredients

5 large oranges

1 cinnamon stick

1 vanilla pod

1 litre bottle of vodka

600g caster sugar

 

a few extra spices to decorate

 

Method

Peel the zest from the oranges using a peeler, or sharp vegetable knife. Make sure not to include any of the pith. Place the zest, spices and vanilla pod in a large, clean jar with a secure lid. A large 1.5 or 2 litre litre kilner jar is perfect for this. Pour over the vodka.Shake the jar every day for a week. You will soon notice that the vodka smell disappears to be replaced by a wonderful orangey, spicy aroma, as the liquid turns a golden orange colour.

 

Then prepare the next stage, place the caster sugar in a heatproof bowl and pour over 500ml of boiling water. Stir until dissolved and then add to the vodka mix. Leave for a further week shaking the jar each day.

 

Then pour the arancello into smaller bottles, and seal. You can add a few extra spices or orange zest in each bottle for that truly festive look.
